I know you’re probably asking yourself, Melissa, did you just say Goldfish cracker crust? Yes, I sure did people! I know I might be channeling my inner grandma here but we’re not talking crushed potato chips on top of tuna noodle casserole. Start layering macaroni and cheese like you do lasagna. Stir until well combned then add 1 cup of cheese. Also, add butter, sour cream, paprika, onion powder, garlic powder, white pepper and salt. The crunchy, buttery breadcrumb topping is the perfect way to finish off the dish and your family will come running as soon as it’s out of the oven. You must try my version of creamy mac ‘n cheese with a buttery, crisp and decadent Goldfish cracker crust. Once pasta is fininshed cooking drain water and add to a large boil. The added dashes of Tabasco sauce will give the baked macaroni and cheese a slight kick, which perfectly complements the rich creaminess of the melted butter and Cabot Sharp Cheddar, Cabot Extra Sharp Cheddar, Cabot 2 Year Cheddar. I think I accomplished all my goals with this simple mid-week meal that can be made ahead for guests, for a quiet night in with the kids or to bring to a party. In a saucepan over medium heat, add the 1/2 cup butter and cook until melted. I have also been brainstorming comfort-type foods to bring to the annual big game party. In a bowl, combine butter, crackers, and Parmesan cheese. In SoCal, we’re actually experiencing Winter-like weather so the craving of comfort foods has been insane. I realize the New Year has just begun, but I have to tell you that there is just something about the Winter months that make me crave comfort foods.
